Flying Fish is known for its exceptional seasonal and sophisticated seafood-driven menu, delivered to diners with expert service and flair along with stunning views of the Sydney city skyline.

 

We are looking for a Junior Sous Chef to join our culinary team at Flying Fish. This is an opportunity for you to develop your skills under the supervision of Executive Chef Peter Robertson and his team

 

The successful candidate will have the following skills and experience:

  • Solid experience in a similar role within a reputable restaurant operation or fine dining.
  • Ability to work varied shifts, including weekends and holidays
  • Demonstrate a passion and flair in the culinary space. 
  • Knowledge and experience with seafood.
  • Hold relevant tertiary qualifications, such as Certificate III in Commercial Cookery

Some of the responsibilities but not limited to:

  • Overseeing a section of the kitchen to ensure that the overall operation runs smoothly and effectively
  • Handle and follow up all incidents immediately, and report accurately
  • Train and develop your team
  • Have thorough menu, product, portion control and preparation knowledge
  • Maintaining food cost to parameter given by the company
  • Keeping outlet ahead of HACCP standards
